Our Souffle Dish

Puffed up high above its mold in a golden crown, the perfect souffle comes out of the oven crisp on the outside and creamy in the center. It must be served at once, for it falls as soon as it begins to cool. Each serving should include some of the crust as well as a generous scoop from the center. White fluted earthenware, 2 1/2 Quart, 8" diameter.
